  • 2 tbsp Fresh Thyme Substitute rosemary if preferred
  • 1 large Egg For brushing; omit for vegan adaptation

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out the puff pastry and transfer it to the baking sheet.
  3. Cook diced pancetta in a skillet over medium heat until crispy, about 3-5 minutes, then drain on paper towels.
  4. Spread cranberry sauce over the puff pastry, layer on the Brie cheese, and top with crispy pancetta.
  5. Fold the edges of the puff pastry over the filling and pinch to seal.
  6. Brush the pastry edges with the beaten egg and bake for 20-25 minutes until golden brown.
  7. Cool for 5-10 minutes before garnishing with thyme and serving.
