Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9x13 inch baking dish with cooking spray or olive oil.
  3. In a large mixing bowl, combine cottage cheese, broccoli florets, diced bell pepper, sliced zucchini, halved cherry tomatoes, fresh spinach, and chopped red onion. Stir well.
  4. In another bowl, whisk together the eggs, olive oil, garlic powder, onion powder, black pepper, salt, and dried oregano.
  5. Pour the egg mixture over the vegetable mix and gently fold to combine.
  6. Pour the mixture into the prepared baking dish and spread it evenly.
  7. Sprinkle shredded mozzarella cheese over the top.
  8. Bake for 30-35 minutes, until golden brown and a firm center.
  9. Allow to cool slightly before slicing and serving.
