- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cottage cheese, eggs, honey or maple syrup, lemon juice, and lemon zest. Whisk until well-blended and smooth.
- Gently fold in the rolled oats and baking powder into the wet mixture. Add the fresh blueberries, folding them in carefully.
- Lightly grease an 8-inch square baking dish and pour the batter into the dish, smoothing it out with a spatula.
- Place the baking dish in the preheated oven and bake for 40-45 minutes.
- Once baked, remove from the oven and let it cool for about 5-10 minutes. Slice into squares and enjoy.
