  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with butter or non-stick spray.
  2. In a bowl, whisk together the flour, cinnamon, nutmeg, salt, and baking powder; set aside.
  3. In another bowl, combine the eggs, sugar, vegetable oil, applesauce, and vanilla extract until smooth.
  4. Gradually mix the dry ingredients into the wet ingredients, then fold in the apples and half of the pecans.
