  • 2 lbs Boneless Skinless Chicken Thighs Can substitute with breasts
  • 8 oz Neufchâtel Cheese Optional, can use regular cream cheese

Method
 

Step-By-Step Instructions
  1. In a small bowl, combine all spices to create a flavorful spice mix. Whisk well and set aside.
  2. In a microwave-safe bowl, mix together olive oil, yellow onion, celery, minced garlic, and the prepared spice mix. Cover and microwave on high for 4 minutes, stirring halfway through.
  3. Blend half of the great northern beans with chicken broth until smooth. Pour into slow cooker.
  4. Add the remaining beans, fire-roasted tomatoes, diced green chiles, and chicken thighs to the slow cooker. Stir to combine.
  5. Cover and cook on low for 6-8 hours. If using Neufchâtel cheese, add in the last 30 minutes.
  6. Once cooked, serve topped with cheese, cilantro, and lime wedges. Enjoy!
