- In a small bowl, combine all spices to create a flavorful spice mix. Whisk well and set aside.
- In a microwave-safe bowl, mix together olive oil, yellow onion, celery, minced garlic, and the prepared spice mix. Cover and microwave on high for 4 minutes, stirring halfway through.
- Blend half of the great northern beans with chicken broth until smooth. Pour into slow cooker.
- Add the remaining beans, fire-roasted tomatoes, diced green chiles, and chicken thighs to the slow cooker. Stir to combine.
- Cover and cook on low for 6-8 hours. If using Neufchâtel cheese, add in the last 30 minutes.
- Once cooked, serve topped with cheese, cilantro, and lime wedges. Enjoy!
