Method
 

Step-by-Step Instructions
  1. Boil a large pot of salted water over high heat, add the whole wheat penne pasta, and cook according to package instructions, usually around 8-10 minutes. Drain and rinse under cold water.
  2. Wash and slice your cucumber into rounds about half an inch thick. Carve out jack-o-lantern faces into the cucumber slices.
  3. In a Ziploc bag, mix 1/4 cup of water with the natural purple food coloring. Add the cooled pasta, seal, and toss to coat. Let it sit for about 5-10 minutes, then drain and rinse again.
  4. In a large mixing bowl, combine the colored pasta, jack-o-lantern cucumber slices, chopped broccoli, halved cherry tomatoes, shredded carrots, and shredded cheese. Drizzle with Italian salad dressing and toss together.
  5. Cover with plastic wrap and refrigerate for at least 1-2 hours, or overnight for better flavor infusion. Toss again before serving.
