Step-by-Step Instructions
  1. In a medium bowl, mix together almond flour, melted butter, sugar-free sweetener, vanilla extract, and salt until the mixture becomes crumbly. Line an 8x8-inch baking dish with parchment paper, then press the crust into the bottom. Chill in the refrigerator for about 15-20 minutes.
  2. In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in the sugar-free powdered sweetener and sour cream, blending until fully incorporated. Stir in vanilla extract and lime juice until well combined.
  3. Spread the cheesecake filling over the chilled crust, smoothing it out evenly. Cover the dish with plastic wrap and refrigerate for at least 4 hours until firm.
  4. In a saucepan, combine mixed berries, sweetener, and lemon juice over medium heat. Cook for about 5-7 minutes until thickened. Remove from heat and cool to room temperature.
