  • 1 large Mango peeled and diced
  • 1 lime Lime Juice freshly squeezed
  • 1 small Jalapeño Pepper seeded and chopped
  • 1 tablespoon Honey optional

Method
 

Step‑by‑Step Instructions
  1. In a mixing bowl, combine olive oil, garlic powder, paprika, cayenne pepper, and salt and pepper to taste. Add the shrimp, tossing until well coated. Let marinate for 10 minutes.
  2. In a blender, add diced mango, lime juice, chopped jalapeño, honey, and a pinch of salt. Blend until smooth and creamy.
  3. Preheat your grill to medium-high heat (around 400°F). Lightly oil the grates.
  4. Thread the marinated shrimp onto skewers, leaving a small gap between each for even cooking.
  5. Place the skewers on the grill, cooking for about 3 minutes on each side until opaque and marked.
  6. Arrange the grilled shrimp on a platter and drizzle with mango lime coulis or serve it as a dipping sauce.
