Preparation Steps
  1. Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with olive oil, and wrap it in aluminum foil. Roast for 30-35 minutes until soft and fragrant.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add fresh spinach and sauté for 2-3 minutes until wilted. Season with salt and pepper and set aside to cool.
  3. In a mixing bowl, combine roasted garlic cloves, ricotta cheese, half of the mozzarella, dried oregano, and a dash of salt and pepper. Blend until smooth to create the white sauce.
  4. Spread the garlic-ricotta mixture over the pizza crust. Layer with wilted spinach, remaining mozzarella, and crumbled feta cheese.
  5. Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown and the cheeses bubble.
  6. Remove from the oven, let cool for a few minutes, then garnish with fresh basil leaves before serving.
