Step-by-Step Instructions
  1. In a mixing bowl, melt unsalted butter and add brown sugar, molasses, vanilla extract, and salt. Mix until smooth, about 2-3 minutes.
  2. Stir in ground cinnamon, ground ginger, nutmeg, and cloves until fragrant. Incorporate the egg or flax egg, whisking until smooth.
  3. Sprinkle in baking soda and all-purpose flour. Stir until a cohesive dough forms.
  4. Divide dough into halves, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  5. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Roll out chilled dough to 1/4 inch thick and cut into Gingerbread Men shapes.
  7. Bake for 7-8 minutes until edges are lightly golden; centers should remain soft.
