  1. Make Cheesecake Filling: Beat cream cheese, granulated sugar, and vanilla extract until fluffy. Scoop into 18 balls and freeze until firm.
  2. Prepare Spice Sugar: Mix granulated sugar with ground ginger, cinnamon, nutmeg, and allspice.
  3. Make Gingerbread Dough: Whisk dry ingredients and cream together butter and brown sugar. Add egg yolks and molasses, then mix dry and wet mixtures.
