  1. Wash and dry the bok choy thoroughly, then chop into bite-sized pieces.
  2. Peel and mince the fresh ginger; do the same for the garlic.
  3. Heat a large wok or non-stick skillet over medium-high heat for 2-3 minutes.
  4. Add sesame oil and heat for about 30 seconds until fragrant.
  5. Add minced garlic and ginger, stirring constantly for 30 seconds until fragrant and golden.
  6. Toss in the bok choy and stir-fry for 3-4 minutes until wilted yet crunchy.
