  • 1 Egg (or Flax Egg) Beaten or substitute
  • 1/2 cup Breadcrumbs (Panko or Regular)
  • 1 teaspoon Chili Powder Adjust to taste
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika Regular paprika works

Step-by-Step Instructions
  1. Begin by rinsing the quinoa under cold water to remove its bitterness. Cook in a saucepan with broth until liquid is absorbed.
  2. In a skillet, heat olive oil and sauté onion until translucent. Add garlic, bell peppers, corn, and beans; cook for 5 minutes.
  3. In a mixing bowl, combine quinoa and sautéed veggies. Stir in cheese, egg, breadcrumbs, and spices until well mixed.
  4. Shape the mixture into small twists and place on a parchment-lined baking sheet.
  5. Bake at 375°F for 20-25 minutes, flipping halfway through until golden brown.
  6. Cool for 5 minutes before serving, optionally with hot sauce or your favorite dip.
