- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine ground chicken, grated Parmesan, breadcrumbs, parsley, minced garlic, beaten egg, oregano, salt, and black pepper.
- Add in the whole milk and mix until you achieve a uniform mixture.
- Shape the mixture into four mini loaves and place them on the prepared baking sheet, leaving space between each loaf.
- Drizzle a little extra virgin olive oil over the tops of each meatloaf.
- Transfer the baking sheet to the oven and bake for 25-30 minutes until golden brown and internal temperature reaches 165°F (74°C).
- Remove the meatloaves from the oven and let them rest for 5 minutes before serving.
