  • 1 lb Ground Chicken or ground turkey
  • 1 cup Grated Parmesan Cheese consider pecorino romano for extra zing
  • 1/2 cup Breadcrumbs gluten-free breadcrumbs are a great option
  • 1/4 cup Fresh Parsley dried parsley can be used, but use less
  • 2 cloves Garlic minced
  • 1 large Beaten Egg
  • 1 tsp Dried Oregano
  • 1 tsp Fine Sea Salt
  • 1/2 tsp Black Pepper
  • 1/4 cup Whole Milk
For the Finish
  • 1 tbsp Extra Virgin Olive Oil
  • 1 cup Grated Mozzarella Cheese optional

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground chicken, grated Parmesan, breadcrumbs, parsley, minced garlic, beaten egg, oregano, salt, and black pepper.
  3. Add in the whole milk and mix until you achieve a uniform mixture.
  4. Shape the mixture into four mini loaves and place them on the prepared baking sheet, leaving space between each loaf.
  5. Drizzle a little extra virgin olive oil over the tops of each meatloaf.
  6. Transfer the baking sheet to the oven and bake for 25-30 minutes until golden brown and internal temperature reaches 165°F (74°C).
  7. Remove the meatloaves from the oven and let them rest for 5 minutes before serving.
