Ingredients
  

For the Chicken
  • 4 pieces Chicken Breasts Can substitute with chicken thighs
  • 2 tablespoons Honey Can substitute with maple syrup
  • 1/4 cup Lime Juice Fresh is best
  • 1 tablespoon Lime Zest Use zest from fresh limes
  • 2 cloves Garlic Minced; shallots can be used
  • to taste Salt
  • to taste Pepper
For the Rice
  • 2 cups Cooked Rice (White/Brown) Quinoa or cauliflower rice can be used
  • 1/4 cup Cilantro Freshly chopped
For the Avocado
  • 2 pieces Avocados Pick ripe ones

Method
 

Cooking Steps
  1. Season the chicken breasts with salt and pepper on both sides. In a bowl, whisk together honey, lime juice, lime zest, and minced garlic. Heat a tablespoon of oil in a skillet over medium heat, then add the chicken and cook for 6-7 minutes per side until golden brown and cooked through.
  2. In the last 2 minutes of cooking, brush the honey-lime glaze over the chicken to caramelize. Remove from skillet and let rest on a cutting board for 5 minutes.
  3. Combine cooked rice with chopped cilantro, a splash of lime juice, and a pinch of salt in a bowl. Set aside to cool slightly.
  4. Slice avocados in half, remove pits, and scoop out the flesh. Cut into thin slices and toss with lime juice, salt, and pepper.
  5. Use a mold to stack layers starting with rice, followed by avocado slices, and topped with chicken. Drizzle remaining glaze around the plate to serve.
  6. Serve and enjoy the stunning layered creation.
