  • 100 g Unsalted Butter at room temperature
  • 150 g Light Brown Soft Sugar caster sugar can be used as a substitute
  • 200 g Self-Raising Flour gluten-free flour works as an alternative
  • 50 g Cocoa Powder high-quality cocoa for best taste
  • 3 medium eggs Eggs for optimal results
For the Frosting
  • 250 g Icing Sugar essential for sweetening and thickening
  • 1 tsp Vanilla Extract opt for pure extract
  • 60 ml Evaporated Milk substitute with double cream but use less
For Decoration
  • 6 Halved Pretzels for reindeer antlers
  • 12 Red M&Ms/Smarties for the reindeer nose
  • 12 Edible Eyes

Method
 

Cupcake Instructions
  1. Preheat your oven to 180ºC (160ºC fan) and prepare a muffin tin with 12 muffin cases.
  2. Cream the unsalted butter and light brown sugar until light and fluffy, about 3-5 minutes. Gradually add in the self-raising flour, cocoa powder, and eggs.
  3. Divide the batter evenly among the muffin cases, filling each about two-thirds full, and bake for 20-22 minutes.
  4. While the cupcakes cool, prepare the fudge frosting by beating the unsalted butter, icing sugar, cocoa powder, vanilla extract, and evaporated milk until silky.
  5. Once cool, pipe the frosting onto each cupcake and decorate with pretzels, M&Ms, and edible eyes.
