- Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, combine 2 eggs, 1/2 cup of vegetable oil, and 1 teaspoon of vanilla extract. Mix in the box of white cake mix until smooth.
- Divide the dough into two portions. Add red food coloring to one and green to the other, mixing until vibrant.
- Chill the dough in the refrigerator for at least 30 minutes.
- Scoop out portions of red and green dough, roll into balls, and coat in powdered sugar.
- Place the dough balls on the baking sheets, spacing them apart. Bake for 9-11 minutes until edges are set.
- Cool on the sheets for 5 minutes, then transfer to a wire rack to cool completely.
