  • 4 pieces ripe pears (Bosc or Anjou)
  • 2 tablespoons olive oil for brushing
For the Filling
  • 4 ounces crumbled blue cheese can substitute with goat cheese or ricotta
  • 1/2 cup chopped walnuts or pecans toasted
  • 2 tablespoons fresh thyme leaves
For Finishing Touches
  • 2 tablespoons honey to drizzle
  • to taste black pepper freshly cracked

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with parchment paper or olive oil.
  2. Slice the pears lengthwise and scoop out the cores.
  3. Brush olive oil on the cut sides of the pears and place cut-side up in the baking dish.
  4. In a bowl, mix the crumbled blue cheese, chopped walnuts or pecans, and fresh thyme leaves.
  5. Generously fill each pear half with the cheese mixture.
  6. Bake in the preheated oven for 15-18 minutes until tender and lightly caramelized.
  7. Let cool slightly, then drizzle honey and sprinkle black pepper over each pear half before serving.
