- Soak dried chickpeas in water with baking soda for at least 8 hours or overnight.
- Rinse and drain the soaked chickpeas. Combine in a food processor with red onion, garlic, green chili, cilantro, parsley, and spices. Pulse until textured but not smooth.
- Mix in chickpea flour and baking powder, add lemon juice if using. Refrigerate mixture for 30 minutes.
- Shape the mixture into small balls or patties and place on a parchment-lined baking sheet.
- Preheat oven to 375°F (190°C). Spray falafel with olive oil and bake for 14 minutes, flip and bake for another 14 minutes until golden brown.
- Serve warm in pita or on a mezze platter.
