  • 1 teaspoon Baking Soda
  • 1 medium Red Onion Chopped
  • 2 cloves Garlic Minced or whole
  • 1 medium Green Chili Optional
  • 1 bunch Cilantro Chopped
  • 1 bunch Fresh Parsley Chopped
  • 1 teaspoon Salt Adjust to taste
For Flavoring
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1/4 teaspoon Ground Cardamom Optional
For Binding and Texture
  • 1 cup Chickpea Flour Or all-purpose flour
  • 1 teaspoon Baking Powder
For a Bright Finish
  • 1 tablespoon Lemon Juice Optional
  • 1 spray Olive Oil Cooking Spray For crispy finish

Method
 

Step-by-Step Instructions
  1. Soak dried chickpeas in water with baking soda for at least 8 hours or overnight.
  2. Rinse and drain the soaked chickpeas. Combine in a food processor with red onion, garlic, green chili, cilantro, parsley, and spices. Pulse until textured but not smooth.
  3. Mix in chickpea flour and baking powder, add lemon juice if using. Refrigerate mixture for 30 minutes.
  4. Shape the mixture into small balls or patties and place on a parchment-lined baking sheet.
  5. Preheat oven to 375°F (190°C). Spray falafel with olive oil and bake for 14 minutes, flip and bake for another 14 minutes until golden brown.
  6. Serve warm in pita or on a mezze platter.
