  1. Start by rinsing the Persian cucumbers thoroughly under cold water. Slice the cucumbers at an angle into thin oval-shaped pieces, about 1/8 inch thick, and set them aside.
  2. Sprinkle a generous amount of salt over the sliced cucumbers and toss to coat. Cover and refrigerate for at least 20 minutes.
