- Peel and slice apples into 8–10 thin pieces and set aside.
- Roll out puff pastry until 1/8-inch thick and cut into 8 equal squares.
- Place 4–5 apple slices in the center of each pastry square and sprinkle with sugar.
- Fold pastry square over the filling to form a triangle and seal the edges.
- Whisk the egg and coat the tops of each turnover as an egg wash.
- Preheat oven to 415°F (210°C) and bake for about 15 minutes until golden brown.
