Preparation Steps
- Gather all ingredients. Peel and chop the carrots. Measure frozen banana and pineapple chunks.
- In a high-powered blender, combine raw carrots, frozen banana, pineapple, coconut milk, Greek yogurt, and oats.
- Add the nut butter, vanilla extract, and ground cinnamon. Optionally, sprinkle in nutmeg.
- Blend on high for 1-2 minutes until smooth. Add more coconut milk if too thick.
- Pour into glasses and enjoy immediately or store in refrigerator for up to 24 hours.
