- Cut the dragonfruit in half lengthwise and scoop out the pink flesh into a mixing bowl.
- In a blender, combine the dragonfruit flesh, cold water, sweetener, and freshly squeezed lime juice. Blend until smooth.
- Taste the mixture and adjust sweetness or acidity as needed, then blend again.
- Optionally, strain the mixture through a fine-mesh sieve for a smoother texture.
- Fill glasses with ice and pour the Dragonfruit Agua Fresca over ice. Garnish with mint leaves and lime slices.
