  • Wholegrain or Rye Bread Can be swapped with gluten-free bread
For the Filling
  • 1 cup Carrots, finely chopped or shredded Substitute grated zucchini for a fresh spin
  • 1 cup Purple Cabbage, finely chopped Feel free to use green cabbage if needed
  • ½ cup Avocado Cilantro Dressing or Green Chutney Other herbaceous dressings work beautifully
  • 1 ½ cups Yogurt Store-bought or homemade, use hung curd for less moisture
Seasoning and Extras
  • Salt Adjust according to taste
  • Black Pepper Optional, skip if milder flavors are preferred
  • Fresh Herbs Optional: mint, dill, parsley, basil

Method
 

Directions
  1. Begin by finely chopping or shredding the carrots and purple cabbage. Drain the yogurt to remove excess moisture.
  2. In a large mixing bowl, combine the drained yogurt with the avocado cilantro dressing or green chutney. Stir in salt and black pepper to taste.
  3. Lay out slices of wholegrain or rye bread. Spread a layer of the yogurt mixture on each slice and layer with chopped carrots, cabbage, and fresh herbs. Top with another slice of bread.
  4. Cut the sandwiches into halves or quarters. Arrange them on a platter and cover with a damp paper towel if preparing ahead.
