- In a small mixing bowl, whisk together 1/2 cup mayonnaise, 1/4 cup sour cream, 1 tablespoon Dijon mustard, and 1 tablespoon apple cider vinegar until smooth and well combined.
- In a large mixing bowl, combine 3 cups of cooked rotini (or penne) pasta, 1 cup of cooked and cubed chicken breast, 1/2 cup of crumbled bacon, 1 cup of halved cherry tomatoes, 1/2 cup of thinly sliced red onion, 1 cup of chopped romaine lettuce, and 1/2 cup of shredded cheddar cheese. Gently toss everything together.
- Pour the prepared dressing over the salad mixture and gently fold the dressing into the salad until all ingredients are evenly coated.
- Just before serving, fold in 1/2 cup of cubed toasted bread or croutons.
- If desired, garnish your Club Sandwich Pasta Salad with chopped fresh parsley or chives for an added splash of color.
