  • 1 cup Soft Apricots Ensure they are soft for easy blending.
  • 1 cup Pitted Dates Essential for binding; do not substitute.
  • 1 cup Cashew Nuts Can be swapped with almonds or sunflower seeds.

  • 4 sheets Wafers Optional but recommended for easier handling.
Plum Variation
  • 1 cup Soft Plums Provides a sweet taste.
  • 1/2 cup Cranberries Adds tartness.

Method
 

Preparation Steps
  1. Line a 25 cm x 20 cm baking pan with cling film.
  2. Add cashew nuts to the blender and blend until crumbly.
  3. Blend soft apricots and pitted dates until smooth, or use plums and cranberries for variation.
  4. Spread blended mixture into the baking pan and press down firmly.
  5. Chill in the refrigerator for at least 2 hours, preferably overnight.
  6. Remove from pan using cling film and slice into bars.
