Ingredients
  

For the Vegetable Layers
  • 1 medium Zucchini Pre-salted to reduce moisture
  • 2 Bell Peppers Sautéed for flavor
  • 2 cups Fresh Spinach Sautéed lightly with olive oil
For the Creamy Filling
  • 15 ounces Ricotta Cheese Creamy texture, can substitute with cottage cheese
  • 1 Egg For binding and richness
  • 1 teaspoon Garlic Powder Enhances flavor
  • 1 teaspoon Italian Seasoning Classic Italian herb flavors
  • 1 teaspoon Salt For seasoning
  • 1 teaspoon Pepper For seasoning
For the Toppings
  • 1/2 cup Parmesan Cheese For flavor
  • 2 cups Mozzarella Cheese For gooey topping

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Sauté the bell peppers and spinach in olive oil for 5-7 minutes until softened.
  3. In a mixing bowl, combine ricotta cheese, beaten egg, garlic powder, Italian seasoning, salt, pepper, and half of the parmesan cheese until creamy.
  4. Spread a thin layer of the ricotta mixture on the bottom of a baking dish.
  5. Layer zucchini noodles on top of the ricotta mixture.
  6. Add sautéed peppers and spinach, followed by dollops of ricotta mixture and a sprinkle of mozzarella cheese.
  7. Repeat layering with remaining ingredients, finishing with a layer of mozzarella.
  8. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10-15 minutes until cheese is golden.
  9. Allow the lasagna to rest for about 10 minutes before slicing.
