- In a blender or food processor, combine vegan cream cheese, sugar, lemon juice, and optional vanilla extract. Blend until smooth and creamy, about 2-3 minutes.
- Preheat oven to 350°F (175°C) and prepare a lined or greased baking tray.
- Unroll the crescent roll dough and slice it into 12 sections. Stretch each piece to create wells for filling.
- Brush the dough with pure maple syrup. Place a tablespoon of cream cheese filling in each well, and add a few teaspoons of pie filling.
- Arrange the assembled Danishes on the tray and bake for approximately 18 minutes, or until golden brown.
- Allow the Danishes to cool on a wire rack for about 5-10 minutes before serving.
