  • 1 medium Fresh Tomatoes Optional

Method
 

Steps
  1. Prepare the yogurt sauce by combining parsley and garlic with Greek yogurt, season with salt and pepper, cover, and chill.
  2. Sauté diced onions in olive oil until translucent, about 5 minutes.
  3. Add ground meat to skillet and cook until browned, about 7-10 minutes.
  4. Stir in tomato paste and ajvar; cook for 1-2 minutes until aromatic.
  5. Add canned tomatoes and zucchini, season, and let the mixture simmer on low heat for 10-15 minutes.
  6. Boil salted water, cook pasta according to package instructions, and drain, reserving some cooking water.
  7. Combine drained pasta with the meat sauce, adding reserved pasta water if necessary, and let meld for a couple of minutes.
  8. Serve pasta topped with yogurt sauce and garnish with fresh tomato and parsley.
