Method
 

Step-by-Step Instructions
  1. Marinate Chicken: In a large bowl, combine slices of chicken breast with 3 tablespoons of water, 1 tablespoon of cornstarch, 1 teaspoon of soy sauce, ½ teaspoon of baking soda, and 1 tablespoon of vegetable oil. Mix well and marinate for 15 minutes.
  2. Prepare Sauce: In a small bowl, whisk together sauce ingredients including ½ cup of chicken broth, soy sauce, oyster sauce, additional dark soy sauce, 1 tablespoon of cornstarch, a sprinkle of sugar, Shaoxing wine, sesame oil, and minced garlic.
  3. Cook Chicken: Heat 2 tablespoons of vegetable oil in a large pan over medium-high heat. Add marinated chicken and cook for 5 to 6 minutes, stirring frequently. Remove chicken and set aside.
  4. Cook Green Beans: In the same pan, add 1 tablespoon of oil, string beans, and ⅓ cup of water. Cover and cook for 3 to 4 minutes until beans are tender.
  5. Combine and Finish: Pour the stir-fry sauce into the pan with cooked string beans, simmer for 1-2 minutes until thickened. Add cooked chicken back, toss to coat.
  6. Serve Hot: Serve String Bean Chicken hot, garnished with sesame seeds or green onions if desired. Enjoy it over rice or noodles.
