  2. Whisk the eggs until beaten and creamy, then blend in cottage cheese.
  3. In a separate bowl, mix almond flour, baking powder, vanilla extract, and cinnamon.
  4. Fold the dry mixture into the wet ingredients until just combined.
  5. Gently fold in diced strawberries carefully not to overmix.
  6. Fill muffin tins about three-quarters full and bake for 18 to 20 minutes.
