Step-by-Step Instructions for S'mores Macarons
  1. Prepare egg whites by aging them at room temperature for 30 minutes in a clean glass bowl.
  2. Process the almond flour, powdered sugar, and graham cracker crumbs in a food processor until fine.
  3. Whip the aged egg whites on medium speed until soft peaks form, then gradually add granulated sugar and whip to stiff peaks.
  4. Gently fold the sifted dry ingredients into the stiff meringue until smooth and shiny.
  5. Pipe 1.5-inch circles of macaron batter on a baking sheet lined with a silicone mat.
  6. Allow the piped macaron shells to sit at room temperature for about 60 minutes until dry to the touch.
  7. Preheat oven to 300°F (150°C) and bake macarons for 15-17 minutes.
  8. Cool the macarons completely before filling with chocolate ganache and marshmallow fluff.
