  • 8 oz Crab Meat substitute with tuna if desired
  • 1 cup Bell Pepper sliced
  • 1 medium Onion sliced
For the Seasoning
  • 2 Tbsp Olive Oil or avocado oil
  • 1 tsp Garlic Powder or fresh garlic
  • 1 tsp Cumin or smoked paprika
  • to taste Salt & Pepper for seasoning
For the Wrap
  • 4 large Tortillas flour or whole-grain
  • 1 cup Shredded Cheese cheddar or Monterey Jack
  • optional Fresh Cilantro omit if preferred

Method
 

Step-by-Step Instructions
  1. Prepare the Ingredients: Rinse shrimp, slice bell pepper and onion, and gather all ingredients.
  2. Sauté the Vegetables: Heat skillet, add olive oil, and sauté sliced bell peppers and onion for 5-7 minutes. Season with salt, pepper, garlic powder, and cumin.
  3. Cook the Shrimp and Crab: Add shrimp and sauté for 3-4 minutes until pink, then fold in crab meat and cilantro, warming for another minute before removing from heat.
  4. Assemble the Roll-Up Bombs: Lay tortilla flat, spoon filling into center, add cheese, and wrap tightly.
  5. Grill the Roll-Ups: Grill roll-ups seam-side down in the skillet for 2-3 minutes per side until golden brown.
  6. Serve: Let cool slightly, slice in half, and serve warm with dipping sauces.
