Baking Steps
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream the unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add pumpkin puree, egg, and vanilla extract to the mixture, blending well.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Fold in chocolate chips, mini marshmallows, and crushed graham crackers.
  7. Scoop rounded portions of dough onto the prepared baking sheet, leaving space in between.
  8. Press additional chocolate chips, graham cracker pieces, and mini marshmallows into each dough ball.
  9. Bake for 12-14 minutes until edges are golden brown, and centers remain soft.
  10. Cool on baking sheet for a few minutes before transferring to a wire rack.
