Baking Steps
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream the unsalted butter, brown sugar, and granulated sugar until light and fluffy.
- Add pumpkin puree, egg, and vanilla extract to the mixture, blending well.
- In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Fold in chocolate chips, mini marshmallows, and crushed graham crackers.
- Scoop rounded portions of dough onto the prepared baking sheet, leaving space in between.
- Press additional chocolate chips, graham cracker pieces, and mini marshmallows into each dough ball.
- Bake for 12-14 minutes until edges are golden brown, and centers remain soft.
- Cool on baking sheet for a few minutes before transferring to a wire rack.
