- In a medium bowl, combine powdered sugar, coconut oil, and peppermint extract. Mix until smooth, about 2-3 minutes. Cover and chill for 30 minutes.
- Scoop out portions of the filling and roll into smooth balls or flatten into discs, about 1-inch thick. Place on a lined baking sheet and chill for another 20-30 minutes.
- In a microwave-safe bowl, heat dark chocolate chips in 30-second intervals, stirring until fully melted and smooth, about 1-2 minutes.
- Dip each chilled patty into melted chocolate, using a fork to lift and let excess drip off. Place back onto the lined baking sheet.
- Optional: Sprinkle with festive decorations before the chocolate sets. Allow to harden at room temperature for 30 minutes or refrigerate for 10-15 minutes.
- Transfer finished peppermint patties to an airtight container. They can be kept at room temperature for up to a week or refrigerated for two weeks.
