  • 1 medium Red Onion Substitute with green onions for milder taste.

Method
 

Cooking Instructions
  1. Cook the white rice according to package directions until fluffy, about 15-20 minutes.
  2. Pound chicken breasts to ¾ inch thickness, season with salt and black pepper.
  3. In a bowl, whisk together honey, lime juice, and soy sauce until combined.
  4. Heat olive oil in a skillet and cook chicken for 5-6 minutes per side until golden brown.
  5. Pour honey-lime glaze over chicken, reduce heat, and simmer for 3-4 minutes.
  6. Slice avocado, dice onion, and chop fresh herbs for toppings.
  7. Assemble the stack with rice, avocado, glazed chicken, and top with onions and herbs.
