  • 1 cup Basmati Rice Can substitute with short or long grain rice.
  • 2 cups Vegetable Broth Water can be used as a substitute.
For the Finish
  • 2 tablespoons Butter Use a vegan substitute for a dairy-free version.
  • 1 each Lemon Juice & Zest Substitute with lime juice for a different flavor twist.
  • Feta Cheese as needed Omit for vegan version or use plant-based feta.

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large pot over medium-high heat. Add the chopped onion and sauté for 5-7 minutes until translucent.
  2. Stir in the minced garlic and sauté for an additional minute, then add 2 tablespoons of dill and chives, mixing well.
  3. Add 5 cups of baby spinach, stirring gently for 3-4 minutes until it wilts.
  4. Sprinkle in 1 cup of basmati rice along with 2 cups of vegetable broth. Season with salt and pepper, then bring to a boil.
  5. Cover the pot, reduce heat, and let it simmer gently for 20 minutes until the rice is tender.
  6. Stir in 2 tablespoons of butter, lemon juice, zest, and remaining dill and chives after removing from heat.
  7. Serve the Greek Spinach Rice garnished with crumbled feta cheese and extra lemon wedges.
