- Heat olive oil in a large skillet over medium-high heat. Add ground turkey, cooking for 5-7 minutes until browned.
- Chop the onions and bell peppers into bite-sized pieces.
- Transfer browned turkey to the crockpot and add onions, bell peppers, tomato sauce, and diced tomatoes.
- Rinse and drain the black and kidney beans, then add them along with the corn to the crockpot.
- Sprinkle in chili powder, cumin, smoked paprika, salt, and pepper, stirring well to combine.
- Cover the crockpot and cook on high for 4 hours or low for 6 hours.
- In the last 15 minutes, taste and adjust the seasonings as necessary.
- Serve hot, optionally topped with shredded cheese, sour cream, or avocado.
