Method
 

Cooking Instructions
  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey, cooking for 5-7 minutes until browned.
  2. Chop the onions and bell peppers into bite-sized pieces.
  3. Transfer browned turkey to the crockpot and add onions, bell peppers, tomato sauce, and diced tomatoes.
  4. Rinse and drain the black and kidney beans, then add them along with the corn to the crockpot.
  5. Sprinkle in chili powder, cumin, smoked paprika, salt, and pepper, stirring well to combine.
  6. Cover the crockpot and cook on high for 4 hours or low for 6 hours.
  7. In the last 15 minutes, taste and adjust the seasonings as necessary.
  8. Serve hot, optionally topped with shredded cheese, sour cream, or avocado.

Notes
