Step-by-Step Instructions
  1. Preheat your oven to 160°C (320°F). Gather your ingredients while the oven heats up.
  2. Grease your traybake tin with unsalted butter and optionally line with parchment paper for easy removal.
  3. Cream together softened unsalted butter and brown sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time to the butter-sugar mixture, mixing well after each addition.
  5. Sift in the all-purpose flour and baking powder, folding gently until no dry flour remains.
  6. Fold in the brandy-soaked mixed dried fruits until evenly distributed throughout the batter.
  7. Pour the batter into the prepared tin and smooth the top for even baking.
  8. Bake for 40-50 minutes or until a skewer comes out clean. Check during the last few minutes.
  9. Cool in the tin for about 10 minutes, then transfer to a wire rack to cool completely.
  10. Once cooled, decorate with marzipan and fondant for a festive finish.
