- Preheat your oven to 160°C (320°F). Gather your ingredients while the oven heats up.
- Grease your traybake tin with unsalted butter and optionally line with parchment paper for easy removal.
- Cream together softened unsalted butter and brown sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time to the butter-sugar mixture, mixing well after each addition.
- Sift in the all-purpose flour and baking powder, folding gently until no dry flour remains.
- Fold in the brandy-soaked mixed dried fruits until evenly distributed throughout the batter.
