Ingredients
  

For the Tots
  • 2 cups Broccoli chopped
  • 2 large Eggs or ¼ cup chickpea flour mixed with water
  • ½ cup Almond Meal/Flour or breadcrumbs
  • 1 cup Sharp Cheddar Cheese shredded
  • 2 cloves Garlic minced
  • ½ teaspoon Salt adjust to taste

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Chop broccoli into small pieces and steam stems for 1 minute, then add florets and steam for 3-4 minutes until tender. Drain and let cool.
  3. In a mixing bowl, combine chopped broccoli, eggs, and almond meal. Add shredded cheddar and minced garlic, mixing until well-blended but chunky.
  4. Scoop portions to shape into tot-like forms and place on the prepared baking tray, leaving space between each.
  5. Optionally spray with cooking oil and bake for 20 minutes or until golden brown and crispy.
  6. Let cool slightly, then serve with your favorite dip. Enjoy!
