Ingredients
  

For the Chicken
  • 2 pieces Boneless, skinless chicken breasts or thighs for extra flavor
  • 1 cup Buttermilk or milk mixed with vinegar or lemon juice
  • 1 cup All-Purpose Flour or gluten-free flour
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • 1 teaspoon Onion Powder can be omitted
  • 1 teaspoon Paprika or cayenne for increased heat
  • 1/2 teaspoon Salt adjust to preference
  • 1/2 teaspoon Black Pepper freshly ground is best
  • Vegetable Oil for frying can use canola or peanut oil
For the Bang Bang Sauce
  • 1/2 cup Mayonnaise or Greek yogurt
  • 1/4 cup Sweet Chili Sauce or honey/agave syrup
  • 1 tablespoon Sriracha adjust to taste
  • 1 teaspoon Lime Juice or lemon juice
  • 1 teaspoon Honey optional

Method
 

Preparation
  1. Cut the chicken breasts into bite-sized pieces and marinate in buttermilk for at least 30 minutes.
  2. Combine flour, garlic powder, onion powder, paprika, salt, and black pepper in a bowl.
  3. Coat marinated chicken pieces in the flour mixture and let them rest on a wire rack for 10 minutes.
  4. Mix mayonnaise, sweet chili sauce, sriracha, lime juice, and honey in a bowl until smooth.
  5. Heat oil in a frying pan to 350°F (175°C) and fry chicken pieces in batches for 4-5 minutes per side.
  6. Arrange fried chicken on a platter, drizzle with Bang Bang sauce, and garnish with green onions or sesame seeds.
