- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a mixing bowl, combine ground chicken, Parmesan cheese, breadcrumbs or almond flour, minced garlic, chopped parsley or spinach, onion powder, salt, and pepper. Mix gently.
- Scoop the mixture and roll it into 1½-inch balls. Place them evenly spaced on the baking sheet.
- Lightly spray the tops with cooking spray or brush with olive oil.
- Bake in the preheated oven for 18-20 minutes until golden brown and cooked through (internal temperature of 165°F / 74°C).
- Let the meatballs cool slightly before serving them hot.
