  • 2 slices sourdough bread Multi-grain, rye, or gluten-free can be substituted.

Method
 

Step-by-Step Instructions
  1. Pour 15 millilitres of extra virgin olive oil into a non-stick frying pan over medium heat and heat for 2 minutes until shimmering.
  2. Add 1 clove of crushed garlic to the pan, stirring until fragrant and golden for about 1 minute.
  3. Incorporate 250 grams of sliced chestnut mushrooms and 15 millilitres of tamari sauce, cooking for 8-10 minutes until tender and golden.
  4. Stir in 2 tablespoons of fresh thyme leaves and freshly ground black pepper, cooking for another 2 minutes.
  5. Cut and scoop out 1 ripe avocado into a bowl, mashing until creamy with a splash of lemon juice and a pinch of salt.
  6. Toast 2 slices of sourdough bread until golden and crisp, about 3-5 minutes.
  7. Spread mashed avocado over each slice of toasted sourdough and top with sautéed mushrooms.
  8. Serve immediately for the best flavor and texture.
