Step-by-Step Instructions
  1. Prepare the apricots: Wash the apricots, cut in half, remove pits, and cube them. Place in a saucepan.

  3. Cook the mixture: Heat over medium, stirring constantly until the mixture begins to bubble, about 5 minutes.
  4. Simmer for thickening: Increase heat and simmer for 10 minutes, stirring frequently until thickened.
  5. Add the spice: Remove from heat and stir in cardamom, allowing to cool slightly for 10 minutes.
  6. Whip the butter: In a separate bowl, whip the butter until fluffy, about 1 minute.
  7. Blend together: Gradually mix in apricot mixture with whipped butter until well combined.
  8. Store the apricot butter: Transfer to an airtight container, smooth the top, and refrigerate for at least 1 hour.
