- Beat the cream cheese with granulated sugar and vanilla extract in a bowl until smooth. Freeze dollops for 30 minutes.
- Combine flour, baking soda, baking powder, and salt in a bowl and whisk. Set aside.
- Mix melted butter, granulated sugar, and brown sugar until fluffy. Add vanilla and egg, mix well.
- Fold dry ingredients into wet ingredients, then gently mix in Oreo pieces and crumbs.
- Preheat oven to 350°F (175°C) and line baking sheets. Let dough rest for 10 minutes.
- Shape dough into balls, insert cheesecake filling, and seal. Place on baking sheets.
- Bake cookies for 13-15 minutes until edges are golden. Cool cookies on sheets and sprinkle with crushed Oreos.
