  1. In a mixing bowl, combine peanut butter, egg, cocoa powder, and salt. If desired, stir in monkfruit sweetener. Mix until smooth. If too thick, add water to achieve a pourable consistency.
  2. Preheat your waffle maker according to the manufacturer's instructions for 3-5 minutes, lightly spray cooking surface with oil.
  3. Pour half the batter into the preheated waffle maker. Sprinkle half of the chocolate chips on top. Close and cook for 2-3 minutes.
