Step-by-Step Instructions
  1. Preheat your oven to 325°F (165°C). In a mixing bowl, combine graham cracker crumbs and melted unsalted butter. Press this mixture into the bottom of a greased 9-inch baking pan and bake for 10 minutes. Allow to cool.
  2. In another bowl, beat cream cheese and sugar until smooth, about 2-3 minutes. Add eggs one at a time, mixing well, then stir in vanilla. Pour over cooled crust.
  3. Bake for 30-35 minutes until edges are set and the center jiggles slightly. Cool on a wire rack, then refrigerate for at least 4 hours.
  4. In a saucepan, gently heat red wine until simmering. Sprinkle gelatin over warm wine and stir until dissolved. Add powdered sugar and lemon juice, mixing well.
  5. Carefully pour wine gelée over chilled cheesecake. Tap to eliminate air bubbles and refrigerate for at least 1 hour.
