- Preheat your oven to 325°F (165°C). In a mixing bowl, combine graham cracker crumbs and melted unsalted butter. Press this mixture into the bottom of a greased 9-inch baking pan and bake for 10 minutes. Allow to cool.
- In another bowl, beat cream cheese and sugar until smooth, about 2-3 minutes. Add eggs one at a time, mixing well, then stir in vanilla. Pour over cooled crust.
- Bake for 30-35 minutes until edges are set and the center jiggles slightly. Cool on a wire rack, then refrigerate for at least 4 hours.
- In a saucepan, gently heat red wine until simmering. Sprinkle gelatin over warm wine and stir until dissolved. Add powdered sugar and lemon juice, mixing well.
- Carefully pour wine gelée over chilled cheesecake. Tap to eliminate air bubbles and refrigerate for at least 1 hour.
