  1. Wash 2–3 cucumbers thoroughly and slice lengthwise into 1/8-inch thick strips using a mandoline.
  2. Stack cucumber strips in groups and pat dry to prevent sogginess.
  3. Spread a layer of cream cheese over each cucumber strip, leaving a small margin at the edges.
  4. Sprinkle everything bagel seasoning over the cream cheese and add slivers of smoked salmon.
  5. Roll each cucumber strip tightly from one end to the other, encasing the filling.
  6. Refrigerate the rolled pinwheels for at least 30 minutes before slicing.
