Ingredients

For the Chili Base
  • 2 pounds Ground Beef (80/20) Can be substituted with ground turkey for a leaner option.
  • 1 Large Yellow Onion (finely chopped) Shallots can provide a milder flavor.
  • 4 cloves Garlic (minced) Garlic powder works if fresh is unavailable.
  • 1 28-ounce can Crushed Tomatoes Feel free to use any canned tomatoes for a twist.
  • 1 14.5-ounce can Diced Tomatoes (undrained) More crushed tomatoes can be used in a pinch.
  • 1 15-ounce can Tomato Sauce A crushed tomato blend can replace it.
  • 2 15-ounce cans Kidney Beans (drained and rinsed) Interchangeable with pinto or black beans.
  • 1 15-ounce can Pinto Beans (drained and rinsed) Swap with extra kidney beans if desired.
  • 2 tablespoons Tomato Paste Can be omitted but may reduce flavor depth.
  • 2 tablespoons Chili Powder Adjust for your desired spice level.
For the Seasoning
  • 2 teaspoons Ground Cumin Coriander can be a delightful substitute.
  • 1 teaspoon Smoked Paprika Regular paprika will work but won’t deliver the same complexity.
  • 1 teaspoon Dried Oregano Italian seasoning can also be used as a replacement.
  • ½ teaspoon Cayenne Pepper (optional) Omit if you prefer a milder taste.
  • teaspoons Salt (to taste) Adjust according to preferences.
  • ½ teaspoon Black Pepper Tweak based on how much heat you enjoy.
  • 1 cup Beef Broth Vegetable broth works for a vegetarian option.

Equipment

  • Skillet
  • Crockpot

Method

Cooking Steps
  1. Brown the Beef: In a large skillet over medium heat, brown the ground beef until it’s no longer pink, about 5-7 minutes. Drain excess grease and set aside.
  2. Add Onion and Garlic: Sauté chopped onion for 4-5 minutes until translucent, then add garlic and cook for 30 seconds until fragrant.
  3. Transfer to Crockpot: Pour the beef and onion-garlic mixture into the crockpot, spreading it evenly.
  4. Add Tomatoes and Beans: Mix in crushed tomatoes, diced tomatoes, tomato sauce, and tomato paste. Add the drained beans and stir well.
  5. Season Generously: Sprinkle in chili powder, cumin, paprika, oregano, optional cayenne, salt, black pepper, and pour in beef broth. Stir well.
  6. Slow Cook to Perfection: Cover and cook on low for 6-8 hours or on high for 4-5 hours.
  7. Taste and Adjust: About 30 minutes before serving, taste and adjust the seasoning as desired.
  8. Serve Warm: Ladle the chili into bowls and invite everyone to add their favorite toppings before serving.

Notes

Always brown the beef for added flavor and feel free to adjust spice levels to suit your preference. This chili gets better after a night in the fridge and is perfect for meal prep.
