Ingredients
  

Chili Base
  • 1 lb Ground Beef or ground turkey for a lighter version
  • 1 cup Onion diced; use shallots for a milder taste
  • 3 cloves Garlic minced; fresh preferred
  • 28 oz Crushed Tomatoes
  • 14.5 oz Diced Tomatoes
  • 2 tbsp Tomato Paste
  • 2 cups Beef Broth or vegetable broth for a vegetarian option
Beans (Optional)
  • 1 can Kidney Beans omit for a bean-free version
  • 1 can Black Beans omit for a bean-free version
Spices
  • 2 tbsp Chili Powder adjust for spice preference
  • 1 tbsp Ground Cumin
  • 1 tbsp Smoked Paprika or regular paprika
  • 1 tsp Black Pepper to taste
  • 1 tsp Salt to taste
  • 1 tsp Oregano or Italian seasoning
  • 1 tbsp Brown Sugar optional
Garnishing
  • 1 cup Shredded Cheese any melting cheese
  • 1/2 cup Sour Cream or Greek yogurt
  • 1/4 cup Sliced Green Onions or chopped cilantro

Method
 

Instructions
  1. Brown the meat by heating olive oil in a skillet, adding ground beef, diced onions, and minced garlic, cooking until browned.
  2. Transfer the meat mixture to the slow cooker. Add beans, crushed and diced tomatoes, and tomato paste. Pour in beef broth and stir.
  3. Add chili powder, cumin, smoked paprika, black pepper, salt, oregano, and optional brown sugar. Stir thoroughly.
  4. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until bubbling and ready.
  5. Stir, adjust consistency with more broth if needed, taste, and serve with garnishes.
